An Antidote to Christmas Excess

A brief, humble and beige little number for you today. Beige it may be, but sometimes beige is just want you need. A baked potato is beige, so is bread. And so, amid the glitz, glitter and gorging of Christmas, you may just want to tuck into a bowl of something calmingly wholesome.



This a bowl bowl of veg, sort of a soup, a chowder or maybe even a stew, but you need not panic, it does not abandon the need for a little more at this time of year. I mean, a big bowl of veg might be healthsome and technically a good plan before turkeyfest, but you need to get yourself in the mood don't you? Advent eating is all just practice for Christmas dinner, and so this has cheese in it. Two cheeses actually, Philadelphia for creaminess and Chedder for... chedderiness.

You don't need much, just a few veg, stock - I used one of those little jellified stock pot thingies - a blob of Philly and a handful of cheese.

Cheesy Veg Soup/Stew

1 onion
A couple of carrots, parsnips, a small swede, a leek
2 or 3 potatoes
A stock cube or pot - I use chicken in perverse meatification, but veg is fine obvs
1 large tablespoon  of Philadelphia
A good handful of grated mature cheddar

1. Chop the veg into untaxing bitesize pieces. Chuck it all in with the stock thing and enough water to come about halfway up the veg. Cover and bring to a simmer until the veg is cooked. Give a couple of stirs, so the veg half boils and half steams.
2. Stir in the Philly first, then the cheddar and mix to make a creamy souce. Add some white pepper if you happen to have it, get the telly on and a bowl of this down you.
